Food Glorious Food

I think I’ve found some balance with regard to Pinterest now. I still browse it, but not as obsessively as I was at first. One thing that Pinterest has done is renew my interest in finding new recipes to try.

Today I made avocado curry egg salad for lunch. I like egg salad and avocados so it sounded pretty low risk to me. I also had a couple of ripe avocados in the fridge and you can only put them off for so long. I’m not sure that anyone else in my family would like this recipe much but I’d make it again. I like the idea of putting in a tortilla and having it as a wrap.

Last week we had some friends over so I made some mini quiches in a muffin pan. I used this recipe as more of a suggestion because I didn’t do all the fat-free stuff and I would have added bacon but our friends are vegetarian. These were a huge hit. I’ll make them again sometime but I hope next time I’ve gotten some silicone muffin cups because they did stick to the papers I used in spite of having sprayed them.

I make pizza at least once a week because it’s easy but let’s face it – it can get just a wee bit boring. So this week I looked in my fridge for inspiration and decided to make a goat cheese pizza. Because I carmelized the onions and sauteed some baby bella mushrooms first, it was more time consuming to make than a regular pizza but it was so worth it – so so yummy.

There was only one catch with the pizza and boy was it a doozy! I used copious amounts of olive oil in preparation and it began to drip through the pizza pan as the pizza baked – and then it started to burn. Very soon I had smoke billowing out of the vent of my oven! I had to open the windows and put on some fans – which wasn’t so fun when it was cold outside! Also, I spent quite a bit of time scrubbing the bottom of my oven the morning after. So one time I’d add to this recipe is either use less olive oil than I did or use a solid pan!

I’ll bet Martha Stewart never has problems like that :)

    I am going to have to try that egg salad – I love avocadoes! I do believe that Martha has her own set of problems (like salmonella for Thanksgiving) – however she DOES have one thing we don’t – a huge staff to clean up after her and make everything ‘nice’!

    Mmmm, yes, the avocado in egg salad does sound good! We’re rolling in eggs right now and hubby just said the other day that he’d like some egg salad so this would be a good time to go for it.

    Martha had salmonella for Thanksgiving? Boy, you can tell I just don’t keep up with the good stuff!

    I love avocados and egg salad too….just never pictured putting then together! :???:
